Sunday - Coq au Vin

Today I want to try something different. I am going to cook a "Coq Au Vin". This is a French dish of rooster/chicken braised with red wine. It's an old recipe from the Julius Caesar period. 


Step 1 - The ingredients

- 1 Chicken / rooster
- 3 Onions
- 2 Tomatoes
- Plain flour
- Olive oil
- Salt and Pepper
- Garlic
- Tomato puree
- Bay leaf
- Rosemary
- Red wine (You should use a good wine. I'm going to use a portuguese wine from the Douro Valley. I bought it in Tesco).
- Half a chorizo (I will use portuguese chorizo. It's my favourite, but any chorizo will do. It's just a question of personal taste).







Step 2 - Preparation

- Chop the onions and the tomatoes
- Chop half a chorizo in 1 cm slices
- Reserve it


- Chop the chicken in several pieces
- Massage the chicken with olive oil and flour
- Fry the chicken, in olive oil, until the chicken skin is golden



- Add the garlic, onions, tomatoes, 2 spoons of tomato puree, chorizo, bay leaf, rosemary, salt, pepper and let it cook in high heat for 3 minutes.



- Finally, add half a bottle of red wine and reduce the heat to the minimum. Let it cook for 1 hour. You have to stir gently the chicken, every 10 minutes or the flour will burn. Enjoy!

Boxing Day - Turkey Rice

I hate waste! I have the Christmas leftovers in my fridge and I have to cook something for lunch. I'm going to show you how to use your Christmas leftovers, without breaking the bank!

Today I'm going to cook the "Turkey Rice". It's a wonderful dish, full of flavour, fast, easy and very, very cheap!

Step 1 - The ingredients

- Roasted turkey
- Some Brussels sprouts
- 2 tomatoes
- 2 carrots
- 1 onion
- 1 glass of rice
- Olive oil (1 spoon)
- Half of chorizo
- Salt and pepper
- White wine (1/4 of a glass)




Step 2 - Preparation

- Wash the vegetables.
- Chop the tomatoes, the onion and the carrots.



- Put the olive oil and the onions in a pan. Let it cook (medium heat) until the onion starts getting golden.

- Chop the chorizo.


- When the onions are ready, add the turkey, the chorizo.


- Let it cook for another 5 minutes. Then add all the vegetables. Let it cook for another 5 minutes. Always in medium heat. Add 1 1/2 glass of water (use glass with the same size of the one used to measure the rice) and let it boil.


- Add the rice. Lower the heat to the minimum and let it cook for 14 minutes. Add salt and pepper.



- That's it! In the end you should have delicious meal. Enjoy!
